Chicken Egg Wrap...a.k.a Burrito



Chicken Egg Wrap...For the lack of a better title, I named this recipe a chicken egg wrap. You can call it a burrito or whatever you choose...really, if you come up with a better title let me know:)! I actually saw part of this recipe in a Cuisine-at-Home magazine, and I just knew I wanted(had) to try it.

I did change it a bit...the filling in the original recipe was different, it had a lentil /vegetarian filling. And I am sure it would have been delicious, but I had some chicken left over from my Dumpling Soup that I wanted to use. So, I made the filling with ingredients I had on hand. The really neat part about this recipe, is that you can use your favorite filling. Try a bean and cheese, shredded beef, turkey filling, or maybe even a breakfast burrito filling.

But what really got my attention when I saw the recipe, was the tortilla dipped in egg. Never seen that step before. The tortilla is actually dipped in the egg and cooked on both sides... makes the tortilla nice and soft, with a thin layer of omelette all around. Now, why didn't I come up with that?! The tortilla was totally transformed by the egg...amazing. I really didn't know what to expect...I just liked the idea. I mean, really, anything with eggs has got to be good! My husband said the tortilla was sort of like.... a crepe, soft and quite delicious.

I am posting the recipe to the chicken filling, but feel free to omit, change and delete any or all ingredients:)...and make your own. But, I think you will like the tortilla. Plus, it's something different to the usual wraps and such. Hope you enjoy...

You will need:


Filling:
3 cups chicken, cooked, shredded
2 tsp olive oil
1/2 cup onion, sliced
3 garlic cloves, minced
1 can green chiles
1 chipotle pepper
3 tsp taco seasoning
1/3 cup water/stock
You will need extra cheese in the final step.


Sauce: You can omit this if you like...I just like my filling a bit on the moist side.
1 TBS olive oil
1 TBS flour
4 TBS chicken stock
1/4 cup cheddar cheese (you can put more cheese if you like...)


Wrap:
4 flour tortillas (10 inch)
2 eggs
1-2 TBS cilantro, chopped


Topping:
salsa,fresh or bottled
extra cheese

Directions:
1. For the filling, you will need to saute onion until soft in a large skillet.
2. Add the shredded chicken.
3. Add the rest of the ingredients and simmer for 20-30 minutes.
4. Take out the chipotle pepper if you like. Set aside.


Make the sauce:
1. In a saucepan, add oil and flour and heat on med/low.
2. Cook for a minute or two and add the chicken stock.
3. Cook till thickened,for about 3-5. Add cheese.
4. Take off heat and mix with the chicken filling.

For the egg wraps:
1. Beat eggs and add some chopped cilantro.
2. Season with with a bit of salt and pepper.
3. Dip both sides of the tortilla into the egg mixture.
4. Place in a skillet with bit of oil. I lifted the tortilla and sneeked in some more beaten egg mixture.
5. Cook until puffy.
6. Turn over and cook second side.
7. Place some of the filling in the middle of the tortilla and add some extra cheese.
8. Roll like a burrito.
 
9. Sprinkle some cheese and heat in a microwave or under the broiler.
10. Pour some salsa over it and enjoy!
