Chicken(Turkey) Salad with Sundried Tomatoes



Chicken(Turkey) Salad with Sundried Tomatoes...This is an excellent way to use up leftover roast chicken or turkey breast meat. The flavors blend very well. You can use this filling for tea sandwiches, fill choux pastry puff balls, or use it with crackers for a quick appetizer. Hope you enjoy...

You will need:
1 1/2-2 cups shredded cooked chicken/turkey
3 TBS sundried tomatoes, diced
2 TBS celery, diced
2 TBS onion, diced
2-3 TBS mayonnaise
salt/pepper to taste
optional (you can add any toasted nuts for flavor and crunch)

Directions:
1. Combine all ingredients in a bowl. Mix to incorporate all ingredients well.
