Foolproof Homemade Mayonnaise


Foolproof Homemade Mayonnaise....I love this recipe! A quick way to do your own homemade mayonnaise.... and make it custom-made. Simply add your own flavorings...chipotle powder, garlic, dill, cilantro... you get the idea!
This recipe asks for 1 raw egg. There is lemon juice which actually cooks the egg and from what experts say there is a very small chance that you will get sick from the raw egg. If you are not too comfortable with that (like I was), I found that poaching the egg in boiling water works just as well. Hope you enjoy...

Note: If you want a stiffer mayo, you may add a bit more oil. I thought the consistency was perfect.

You will need: adapted from America's Test Kitchen
  • 1 egg
  • 2 tsp lemon juice
  • dash or two of Tabasco
  • 1/4 tsp Dijon mustard
  • salt and pepper to taste
  • 1 1/4 cup vegetable oil

Directions:

1.In a food processor, process first 5 ingredients for a few seconds.
2. With the processor running, drizzle the oil slowly at first and then pour the rest of the oil slowly until all the oil is used up.There you have it! Great and easy... and no more store bought kind unless you have too:)!

I can't tell you how easy this was. I don't have a food processor so I used my kitchen aid to do the mixing. It worked like a charm. After trying all day to make mayo and many failed attempts, I finally tried this one and it worked. Thank you so much.
