I doubled your recipe (using brown and white sugar, but leaving out 1/3 cup sugar). I also added 1 cup of walnuts. The recipe made a large loaf plus 17 muffins. Very moist and plenty sweet. Apparently the muffins I make are just too "healthy" : ) Most Costco copycat muffin recipes I found called for box cake mix, and although I was open to a sweeter muffin, I wanted something completely scratch. Thank you for sharing this recipe! I did blueberry and they turned out very well. I cut the sugar in half, and replaced 1/2 cup flour with 1/2 cup ground oats. I will make again! I'm interested to find out how well they keep, although I imagine they won't be around long. Oh, they were perfectly done 40 seconds before 20 minutes. As for the almond extract, you can use a bit more vanilla or substitute with another of your favorite flavoring that you have and like.
