I can only think that the bread dough did not rise sufficiently. Sometimes, the rising time can vary... depends how cool/warm it may be in the kitchen. Another reason may be that it didn’t have a long enough bake time... where it might have not risen well in the oven as it was taken out too early? Just some thoughts... hope that helps! It sounds to me like the bread maybe needed a bit more time in the oven? Since it was gummy? But since you say it was fluffy and a bit dry, it would lead me to think more towards the fact that the bread might have been cut too early, without being completely cooled down--- that will oftentimes result in gummy bread. Wrapping the bread should do the trick.<br /><br />I wouldn't recommend placing water in the oven when bread is baking... because the steam will actually cause the bread to have a harder crust. The steam is used in other bread recipe when you want to achieve a hard crust ... which is opposite of what you desire:). <br /><br />Try wrapping the bread next time when it is still slightly warm... The tiny bit of residual warmth, will soften the bread when wrapped with plastic wrap. And the butter will soften the crust as well. Over time, when bread is wrapped, the crust will soften. <br /><br />Another thing to keep in mind, is when you bake the bread, if you see the crust browning, opt to place a sheet of aluminum foil over the top of the bread(lightly just covering it) to prevent the crust from over browning as it bakes, which can from a harder than normal crust.<br /><br />Hope that helps... and thanks for coming back and sharing your feedback.
